摘要
目的检测东莞市厚街镇餐饮业餐具消毒状况,并探讨相关的防治对策。方法在2009年3~4月期间,对本镇139家餐饮场所进行餐具消毒抽样检测,并对检测结果展开分析。结果自动洗碗机和蒸汽消毒效果较好,电子消毒效果相对较差;大型和中型餐饮场所消毒效果较好,小型餐饮场所相对较差。结论餐饮业餐具消毒是一个长期的、动态的管理过程,需要政府、公众和餐饮业主共同参与,从而使整个餐饮行业餐(饮)具消毒管理工作趋向规范,有效保障消费者的健康。
Objective To investigate the current state of tableware disinfection of catering services in Houjie,and explore the measure of prevention and treatment.Methods During the March and April in 2009,139 cases of palaces of catering services were detected for tableware disinfection,and the results were analyzed,then.Results The disinfection effect of automatic dishwasher and vapor was good,but electronic disinfection effect was relative poor,large and medium-size places were good,and small palaces were relative poor.Conclusion Tableware disinfection of catering services is a long and variational process;it needs the joining of public,government and enterprise to promote the healthy development of entire trades.
