摘要
烹调烟雾是我国居民室内常见的空气污染物,其健康危害日益引起人们的重视。综述了烹调烟雾的化学组成成分、吸入毒性、致突变性及与原发性肺癌的发病关系等方面的研究现状。研究结果表明,烹调烟雾对人体健康存在一定的危害,有必要对烹调烟雾的污染情况,毒作用机理进行深入的研究,以便为采取防范措施提供依据。
Cooking fume is a usual indoor pollutant. Its hazard is concerned more and more by citizens. The paper reviewed the research of cooking fume on chemical composition, toxicity of breathing, mutation and epidemiological relationship with primary lung cancer. Research indicated that cooking fume is har mful to human health. For the controlling of its hazard, it is necessary to study the polluting situation, mechanism of toxicity of cooking fume.
