摘要
[目的]验证使用铁盐加工皮蛋的效果,为研究稳定可靠的含铁皮蛋加工工艺提供实践依据。[方法]分别用浓度0.2%、0.4%、0.6%的FeSO4.7H2O和FeCl3.6H2O配制成6组料液,浸泡鲜鸭蛋,在浸泡的第18和32天监测皮蛋的成熟情况;皮蛋成熟出缸后,直接用小塑料袋包裹存放在密闭容器中,90 d后检查品质情况。[结果]浓度0.6%氯化铁料液加工皮蛋的效果最好;浓度0.6%硫酸亚铁、0.2%氯化铁、0.4%氯化铁料液加工皮蛋的效果稍差;浓度0.2%、0.4%硫酸亚铁加工不出合格的皮蛋产品。[结论]铁盐也能够用来加工皮蛋,用三价铁盐加工的效果好于二价铁盐,并且料液添加铁盐的最佳量为0.6%。
[Objective] The practical reference for the study on the stable and reliable processing technology of preserved egg with iron was provided through the verification of the effect of the preserved egg processed with iron salt.[Method] The fresh duck eggs were soaked with 6 kinds of treatment solutions,consisting of 0.2%,0.4%,0.6% FeSO4·7H2O and FeCl3·6H2O,respectively.The maturity of the preserved eggs was checked on the 18th day and for 32nd day after soaked.The preserved egg,directly wrapped with a small plastic bag,was stored in airtight container after it had been maturation;and the quality of preserved egg was tested on the 90th day after its storage.[Results] The best treating effect on preserved egg was in the treatment of 0.6% solution of ferric chloride;then,the better treating effect on preserved egg,in the treatment of 0.6% solution of ferrous sulfate,0.2% solution of ferric chloride,0.4% solution of ferric chloride;and the preserved egg,treated with 0.4% solution of ferrous sulfate or 0.2% solution of ferrous sulfate,resulted in unqualified products.[Conclusion] The solution of iron salts can also be used for the treatment of preserved eggs.And the effect of trivalent iron salt on preserved egg was better than that of bivalent iron salt and the best amount of iron salt added in the treatment solution was 0.6%.
