不同生长年限党参氨基酸组分分析及营养价值评价 被引量:34

摘要 为了比较九寨沟县所产不同生长年限党参氨基酸组分及含量,探讨其营养价值,文中采用盐酸水解法,使用日立L-8800全自动氨基酸分析仪测定。结果显示:九寨沟县所产党参所含氨基酸种类有15~16种,其中7种为人体必需氨基酸。总氨基酸含量较高,并随生长年限的增加而增加。多数必需氨基酸的含量低于FAO/WHO氨基酸模式谱中的必需氨基酸含量,且随生长年限的增加,符合FAO/WHO氨基酸模式谱中要求的氨基酸种类不断减少;1~3年生党参样品的蛋白质较接近理想蛋白质的要求。通过分析得出,以FAO/WHO氨基酸模式谱为标准以3年生党参较好;以FAO/WHO提出的理想蛋白质为标准,则以2年生党参为好;而以特殊功效及味觉氨基酸为开发目标,则以4年生党参较好。 Objective: Comparison on amino acids contents of Radix Codonopsis with different growth years from Jiuzhaigou County and evaluation of their nutritional value. Method: The contents of amino acids were hydrolyzed by HCL and determined by HITICHI L-8800 automatic analysis instrument. Result: There are 15 - 16 kinds of amino acids containing 7 kinds of essential amino acids in Radix Codonopsis from Jiuzhaigou County. The contents of the total amino acids are higher and increased with years of growth. The contents of essential amino acids in most samples are lower than the FAO/WHO recommended pattern. The kinds of amino acids which meet with the FAO/WHO recommended pattern are decreased with the years of age increased. The proteins in one, two, three years old samples are closer to the requirement of ideal proteins. Conclusion : The Radix codonopsis with three years old are better on amino acids on FAO/WHO suggested, two years old sample are better on ideal proteins FAO/WHO suggested, four years old are better for the special effect and tasted amino acids .
