摘要
在酵母多糖现有3种提取工艺的基础上,提出了自溶—酶—碱法提取啤酒酵母泥中酵母多糖的工艺,结果表明:采用自溶—酶—碱法提取的多糖色泽乳白、得率高达12.3%,其多糖含量为92.72%、总氮含量为0.07%、水分含量为6.04%、灰分含量为1.24%。薄层层析表明,酵母多糖的主要成分为葡萄糖和甘露糖。
Zymosan extracted from waste beer yeast cell wall by acid-alkali method,enzyme-alkali method and autolysis method was analyzed.An autolysis-enzyme-alkali method was developed and introduced in the present paper.When zymosan was extracted from waste beer yeast by autolysis-enzyme-alkali method,its yield ratio was 12.3%,its polysaccharide content was 92.27%,and the content of total nitrogen,moisture and ash was 0.07%,6.04% and 1.24% respectively.The main components of the extractive were found to be mannose and glucose by the thin layer chromatography.
