摘要 花生蛋白是解决人类蛋白质紧缺的一种营养价值较高的植物蛋白,对维护人体健康和幼儿发育具有重要作用。研究发现,蛋白质经水解制得的肽在营养保健领域具有预防老年疾病、增强免疫力、降血脂等多种卓越的生理功能,在食品、医疗等领域有巨大的开发价值。介绍花生多肽的制备工艺及理化性质,分析其功能和应用前景,为花生精深加工提供参考。 Peanut protein is of high nutritional value and it plays an important role in maintaining people's health and infants' growth.Research finds that peptides obtained from protein through hydrolyzation can prevent aging,increasing immunity,and reducing blood fat.Hence,it is of great exploitation value in areas of food and medical treatment.This article deals with the preparation techniques of peanut polypeptide,and its physicochemical properties,and makes analysis on its functions and application prospects so as to provide reference for the intensive processing of peanut.
