摘要
随机采集了聊城市区的夏季和冬季不同种类蔬菜样品,分析了蔬菜样品中硝酸盐和亚硝酸盐的含量。结果表明,所检测的16种蔬菜、112份蔬菜样品中,叶菜类蔬菜硝酸盐平均含量最高,其次是豆类、瓜类和根菜类蔬菜;茄果类蔬菜中硝酸盐含量最低。采用国家标准(GB18406.1-2001)进行评价,在所检测的112份样品中,有57份样品硝酸盐含量超标,占样品总数的51%;蔬菜中亚硝酸盐含量相对较低,均不超标。以WHO/FAO规定的日允许摄入量(ADI)换算得到的标准评价了蔬菜中硝酸盐的污染状况,得出有必要采取有效的污染防治措施控制聊城市蔬菜的硝酸盐污染状况。
The content of nitrate and nitrite were analyzed in 16 kinds of vegetables and 112 samples collected from Liaocheng urban area.Research results indicated that there was the highest content of nitrate in leaf vegetables,followed by leguminous vegetables,melon vegetables,root and stem vegetables.The lowest content of nitrate was found in eggplant and fruit vegetables. According to GB 18406.1-2001,it was found that in 112 samples there was 51% samples,nitrate contents had exceeded the national standards,while the content of nitrite of all samples reached the national standards. In accordance with standards converted from the maximum daily nitrate intake threshold issued by WHO/FAO,it is necessary to take effective measures to controll and prevent the nitrate contamination of vegetables.
