摘要
[目的]为人工养殖中华鲟的产业化开发及加工利用提供理论依据。[方法]以1龄人工养殖中华鲟为试验样本,分别测定其含肉率和肌肉的生化成分,并对其营养价值进行评价。[结果]1龄人工养殖中华鲟的含肉率为68.43%,其肌肉的生化成分为:水分79.85%,蛋白质16.97%,脂肪0.99%,灰分1.49%,无氮浸出物0.70%;鱼肉中富含18种氨基酸,其中谷氨酸(Glu)含量最高,其次为赖氨酸(Lys)、天冬氨酸(Asp)和亮氨酸(Leu),胱氨酸(Cys)含量最低;鱼肉必需氨基酸占总氨基酸的比值(Weaa/Wtaa)为42.79%,必需氨基酸与非必需氨基酸的比值(Weaa/Wneaa)为74.81%;必需氨基酸指数(EAAI)为69.76。[结论]1龄人工养殖中华鲟具有较高的营养价值。
[Objective] The study aimed to provide the theoretical foundation for industrial development and processing and utilization of artificially bred Acipenser sinensis Gray.[Method] With 1-year old artificially bred A.sinensis as the tested sample,its flesh rate and biochemical composition of muscle were determined resp.and its nutritive value was evaluated.[Result] The flesh rate of 1-year old artificially bred A.sinensis was 68.43% and the biochemical composition of its muscle was 79.85% water + 16.97% protein + 0.99% fat + 1.49% ash + 0.70% extracts without nitrogen;the fish meat was rich in 18 amino acids,among them the content of glumatic acid(Glu) was the highest,the next was lysine(Lys),aspartate(Asp) and leucine(Leu),and the content of cystine(Cys) was the lowest;the ratio of essential amino acids to total amino acids(Weaa/Wtaa) in fish meat was 42.79%,that of essential amino acids to non-essential amino acids(Weaa/Wneaa) was 74.81% and its essential amino acid index was 69.76.[Conclusion] 1-year old artificially bred A.sinensis had higher nutritive value.
