摘要
目的了解邢台市桥东区餐饮单位餐具的卫生状况和消毒状况,以保障消费者的身体健康。方法按《食(饮)具消毒卫生标准》(GB 14934-1994)测定大肠菌群,并进行统计分析。结果大中型餐饮单位餐饮具消毒合格率(92.2%)优于小型餐饮单位餐饮具合格率(86.5%),两者差异有统计学意义(P<0.01);冬春季节餐饮具合格率(92.1%)优于夏秋季节餐饮具合格率(87.3%),两者差异有统计学意义(P<0.01);B级餐饮单位餐饮具消毒合格率(95.0%)明显优于C级餐饮单位餐饮具消毒合格率(86.4%),两者差异有统计学意义(P<0.01)。结论该区餐饮单位餐具消毒质量仍存在一定问题,应进一步加强对餐饮服务业卫生状况的监督管理,定期抽样检测,进一步提高饮食服务业的卫生状况,确保消费者的饮食安全。
[Objective]To understand the hygiene and disinfection status of tableware in catering units of Qiaodong District,so as to protect the health of consumers.[Methods]Determination of coliform bacteria was based on "Disinfection Dtandards for tableware"(GB14934-1994).The results were statistically analyzed.[Results]Tableware disinfection pass rate of large and medium-sized catering units e(92.2%) was better than that of small-sized catering units(86.5%),the difference was significant(P〈0.01);tableware disinfection passing rate in winter and spring(92.1%) was better than that in summer and autumn(87.3%),the difference was significant(P〈0.01);tableware disinfection passing rate of B-class restaurants(95.0%) was obviously better than that of the C-class restaurant(86.4%),the difference was significant(P〈0.01).[Conclusion]The quality of tableware disinfection is not satisfactory in catering units of Qiaodong District.It is necessary to strengthen the hygienic supervision and management,to conduct regular sampling,and to further improve the hygienic situation of catering industry,so as to ensure food safety.
