摘要
低聚壳聚糖含有大量的羟基和氨基,具有较好的水溶性和抗氧化活性。化学改性可以得到不同的低聚壳聚糖衍生物,官能团的引入会使抗氧化性能也随之发生改变。综述了国内外低聚壳聚糖衍生物抗氧化性能的研究进展。
Chitosan oligosaccharide has good water-soluble ability,and it contains many active hydroxyl and amino-groups.These active groups lead to a very good antioxidant activity.Different derivatives of chitosan oligosaccharides were be prepared by chemical modification,the antioxidant activity was changed also.In this paper,the antioxidant activity of chitosan oligosaccharide derivatives both at home and abroad is reviewed.
