1999~2008年莱芜市餐饮业食物中毒资料分析

摘要 [目的]加强餐饮服务业的监管,找出关键控制环节,有效预防食物中毒事件的发生。[方法]对莱芜市餐饮服务业1999~2008年食物中毒情况进行分析。[结果]1999~2008年莱芜市餐饮业累计发生食物中毒31起,中毒301人,死亡1人。其中,集体食堂发生2起、中毒131人,餐饮服务单位发生11起、中毒74人,家庭聚餐发生14起、中毒77人,死亡1人;第三季度发生11起,中毒122人,死亡1人;农村发生22起,中毒196人,死亡1人;细菌性食物中毒12起、中毒176人,化学性食物中毒17起,中毒118人(其中亚硝酸盐中毒10起、中毒101人),动植物性食物中毒2起、中毒7人、死亡1人;中毒的食品为肉及肉制品的21起,中毒199人。[结论]莱芜市餐饮业食物中毒以家庭聚餐、餐饮服务业为多,农村较多见,中毒的食源以肉及肉制品为主。 [Objective]To strengthen supervision of catering services to identify key control points,to ensure effective prevention of food poisoning incidents.[Methods]Data analysis was made on food poisoning in catering services of Laiwu from 1999 to 2008.[Results]From 1999 to 2008,a total of 31 food poisoning occurred in restaurants of Laiwu city,poisoning 301 people,with one death.Among them,2 cases occurred in collective canteens,poisoning 131 people,11 food service units,poisoning 74 people,14 cases in family gathering,poisoning 77 people,with one death;in the third quarter,11,poisoning 122 people,with one death;22 cases occurred in rural areas,poisoning 196 people,with one death;12 cases of bacterial food poisoning,poisoning 176 people,17 cases of chemical food poisoning,poisoning 118 people(including 10 cases of nitrite poisoning,poisoning 101 people),2 animal and plant food poisoning,poisoning 7,with one death;poisoned food of meat and meat products 21,poisoning 199.[Conclusion]Food poisoning is more common in the families and catering services,more in rural areas,poisoning food sources are meat and meat products.
