摘要
为选择产酸性能优良的乳酸菌用于发酵乳制品的生产,对Lactobacillus bulgaricus B-3菌株采用紫外线和亚硝基胍进行诱变选育,结果表明,菌株B-3初始产酸能力为57.83°T,以0.3 g/L亚硝基胍处理60 min和紫外线照射120 s复合诱变3轮,最终得到一株产酸能力为82.65°T的菌株,较出发菌株提高了42.92%。
In order to screen out the excellent lactic acid bacteria strain used for producing ferment dairy, ultraviolet (UV) and nitrosoguanidine (NTG) were both employed to mutate the tactobacillus bulgaricus B-3. The results showed that a new high acid-producing strain with acidproducing 82.65 °T was screen out. The acid-producing of the new strain was improved 42.92% compared with the original strain B-3 with acid-producing 57.83 °T after radiation with UV for 120 s and mutation with NTG (0.3 g/L) for 60 rain for three times.
