摘要
从茅台酒生产环境中分离纯化得到1株枯草芽孢杆菌,对该菌株培养基的小麦粉浓度、初始pH值、培养温度三因素进行正交实验,确定其最适培养条件,并分析在该培养条件下所产代谢物。实验确定的最适培养条件为:小麦粉1.5%,初始pH 7.0,培养温度35℃,培养时间12 h,蛋白胨1%,酵母膏0.5%,氯化钠1%,磷酸氢二钾0.5%。利用气质联用色谱仪分析其代谢产物,检测到30多种物质,主要为酸、酯类物质。
A Bacillus subtilis strain was isolated from the production environment of Maotai liquor.In order to determine its optimum culture con-ditions and analyze its metabolites,orthogonal experiments of three factors including wheat power content,initial pH value,and culture tempera-ture of the culture medium were carried out.The optimum culture conditions were determined as follows: 1.5 % wheat power,initial pH 7.0,cul-ture temperature at 35 ℃,culture time 12 h,peptone 1 %,yeast extract 0.5 %,NaCl 1 %,and K2HPO4 0.5 %.More than thirty kinds of metabo-lites mainly including acids and lipids were detected by GC analysis.
