Applications of high performance liquid chromatography（HPLC） and liquid chromatography-mass spectrometry（LC-MS） techniques for the determination of nutritious substances in health care food were reviewed.As nutritious substances vitamins,polyunsaturated fatty acids,carotenoids,polysaccharides,saponins and flavonoid compounds were specifically discussed.
