超声处理对大豆蛋白分子结构的影响 被引量:10

摘要 本文研究了超声对大豆蛋白分子结构的影响。GPC和SDS-PAGE分析试验结果表明,超声主要影响大豆的7S蛋白组分,并使其发生可溶性聚合;超声处理后7S亚基降解最为显著,而对11S球蛋白酸性亚基(11SA)和碱性亚基(11SB)影响很弱;超声作用先使球蛋白解离然后聚合。
