摘要
亚硝酸盐对人体具有严重的伤害。该课题研究几种乳酸菌对亚硝酸盐的降解能力,分析乳酸菌降解亚硝酸盐的可能机制。结果显示乳酸菌降解亚硝酸盐的主要因素是产生的酸,当pH低于6以下时,亚硝酸盐大量降解。乳酸菌中亚硝酸还原酶的作用影响不大。同时在试验中发现,培养基中营养成分也对亚硝酸盐具有一定的降解作用。
Nitrite has an serious harmful to human health. In this study, some lactic acid bacteria were researched for nitrite degradation, and possible mechanism of nitrite degradation from lactic acid bacteria was further analyzed. Results showed that acid plays a key role in nitrite degradation, when pH is below 6, nitrite content descent obviously. Nitrite reductase from lactic bacteria play an secondary role. And nutritional ingredient from medium also play an positive role on nitrite degradation.
