摘要
利用脉冲辐解瞬态吸收光谱技术研究了橙皮苷和柚皮苷与羟基自由基(·OH)的瞬态反应机理和动力学。研究结果表明:N2O饱和的4.9×10-5mol·L-1的橙皮苷、5.2×10-5mol·L-1的柚皮苷水溶液经脉冲辐解分别产生了橙皮苷酚氧自由基(特征瞬态吸收峰320nm)和柚皮苷酚氧自由基(特征瞬态吸收峰310~340nm);反应的表观反应速率常数分别为8.38×105s-1和6.48×105s-1。橙皮苷和柚皮苷可有效清除羟基自由基。实验还从结构上探讨了橙皮苷和柚皮苷的抗氧化活性机制。
Respective transient reactions of hesperidin and naringin with hydroxyl radicals and kinetics were investigated by pulse radiolysis. Results showed that N2O-saturated aqueous solution of hesperidin ( 4.9 × 10-5 mol·L-1) and naringin ( 5.2 × 10-5 mol · L-1 ) generated the phenoxy radical after the pulse radiolysis. The respective transient absorption peak of hesperidin and naringin were at 320nm and 310 ~ 340nm. The apparent reaction rate constants of hesperidin and naringin were 8.38 ×105s-1 and 6.48 ×105s-1,respectively.Hesperidin and naringin had significant hydroxyl radicals scavenging effect.The probable mechanisms of antioxidants activity in structual aspects were also discussed.
