摘要
为了改善枣渣不溶性膳食纤维(IDF)的色泽,提高产品质量,以双氧水为脱色剂对枣渣IDF的脱色工艺进行了初步研究,同时对脱色后枣渣IDF的性能特性进行了测定。通过正交实验确定了枣渣IDF脱色的最佳工艺为:H2O2的浓度为10%,料液比1∶10,pH为11,脱色温度为60℃,脱色时间3h。在此条件下脱色枣渣IDF的色差值达到86.10,显著改善了枣渣IDF的质量,使其持水力提高了2.53倍,溶胀性提高了1.81倍。
Browning is a difficult problem in dietary fibre processing.H2O2 was utilized to decolor jujube residues dietary fibre for improving its quality.The nutritional components and functional properties of jujube residues dietary fiber were also analysed.Optimum reaction conditions were defined through orthogonal experiment.The optimum conditions were: The density of H2O2 was 10%,the ratio of material to liquid 1∶10,pH11,decoloring temperature as 60℃ for 3h.Under these conditions,the color difference value of discolored IDF reached 86.10 which significantly improved the quality of IDF of jujube residue.Water holding capacity and the swelling capacity increased 2.53 times and 1.81 times.
