摘要
茯砖茶中存在着大量的生物活性物质,主要是茯砖茶加工过程中微生物作用所致。本文对茯砖茶加工过程中的主要微生物、微生物的酶促作用及其品质形成机理进行综述。
There are plentiful bioactive substances in Fuzhuan tea,that is mainly caused by the function of microorganism in the fermentation process of Fuzhuan tea.The main microorganism,its enzymic promotion function and the mechanism of quality formation in the process were summarized.
