摘要
对辽西地区主栽的唐油4号、花育20、白沙1016三个品种花生的营养成分进行了较全面的分析测定和评价,并对其优势进行总结分析。结果表明:辽西花生中的脂肪和蛋白质平均含量分别为49.65 g/100 g和20.35 g/100 g,其中蛋白质含量低于其他地区的平均水平;三个品种花生的含糖量较高,平均含量为10.87g/100 g,均符合食用花生的基本要求,尤其白沙1016口味香甜,很适合食用;必需氨基酸占氨基酸总质量的34.90%,其中唐油4号为34.85%,花育20为34.58%,白沙1016为35.35%;不饱和脂肪酸含量较高,尤其是亚油酸的平均质量分数为38.67%,白沙1016高达39.7%;油酸/亚油酸比值均较低,平均为1.02,不利于花生及其制品的储存。
The nutritional compositions of three peanut varieties mainly grown in Western Liaoning,including Tangyou-4,Huayu-20 and Baisha-1016,were comprehensively determined and evaluated,and their advantages were summarized.Results:The average contents of fat and protein in the peanuts in Western Liaoning are 49.65g/100 g and 20.35 g/100 g,respectively;the protein content is lower than that of other regions.The sugar content of the three peanut varieties is relatively high with average content of 10.87 g/100 g,fitting the basic requirement for snack peanut,and Baisha-1016 is especially flavorful and tasty.The average content of essential amino acids accounts for 34.90% of the total amino acids,with 34.85% for Tangyou-4,34.58% for Huayu-20 and 35.35% for Baisha-1016.The content of unsaturated fatty acids is relatively high;especially the content of linoleic acid,38.67% for average and up to 39.70% for Baisha-1016.The ratio of oleic acid and linoleic acid is low with average value of 1.02,disadvantageous for the storage of peanuts and their products.
