The composition and characteristics of muscle fiber have great relationship with meat quality.Meat quality is usually associated with muscle metabolism and contraction,and it is determined by the distribution of types of muscle fiber.The paper describes types,difference,biochemical and histochemical properties of muscle fiber.And the relationship between traits and meat apparent character was explored in order to increase the output of livestock meat and improving meat quality in future breeding strategies.
