摘要
本研究从全国17个省份抽取大量蜂蜜样品,测定其果糖、葡萄糖、蔗糖、麦芽糖及δ13CH和δ13CP值,在此基础上计算出ISCIRA指数、果葡比、还原糖含量、C-4植物糖含量等,以上述10个指标为统计对象,分析我国市场蜂蜜真实性现状,提出潜在的判别指标。
We collected lots of honey samples from the 17 typical provinces, and tested the content of fructose, glucose, sucrose, maltose and the δ13C values of honey and protein in honey. On the basis of these data, we also calculated the ratioof fructose to glucose, the content of ruducing sugar, the content of sugar source of C-4 plant and the ISCIRA index. Then, we researched these ten indexs above-mentioned using the SPSS statistical software. Subsequently, we described the qualitity stastus of honey in market and proposed the potential discriminant index for the authenticity of honey.
