假单胞菌在猪肉上生长预测模型的建立与验证 被引量:15

摘要 为能快速预测冷却肉中微生物的生长,以从冷却肉中分离得到的假单胞菌为研究对象,建立和验证4-16℃条件下假单胞菌的生长动力学模型。用Statistica软件拟合不同温度下的生长情况,结果表明,修正的Gompertz方程能很好地描述不同温度下假单胞菌在猪肉上的生长动态。温度对μmax(最大比生长速率)和Lag(延滞时间)的影响,用平方根模型(Belehradek)描述呈现良好线性关系。用贮藏在8℃和12℃下假单胞菌的生长试验值,验证恒定温度下模型的有效性;为了验证波动温度下模型的有效性,引入了等同生长时间(EGT)概念,通过偏差度和准确度的计算,表明建立的模型可有效预测4-16℃假单胞菌在猪肉中的生长。 The growth dynamic model of Pseudomonas isolated from cooling meat was established and verified by Statistica software at 4~16 ℃ to rapidly predicate microbial growth in cooled meat.The results showed that the modified Gompertz equation could describe the growth dynamic of Pseudomonas at different temperature,and the correlation regression of Belehradek model could describe the effect of temperature on its μmax,and Lag time.The model effectiveness at steady temperature was verified by using its growth testing values at 8℃ and 12℃ and the model effectiveness at fluctuating temperature was verified by calculating bias and accuracy values based on the EGT concept,which indicates the established model can predicate growth of Pseudomonas in pork at 4~16 ℃ effectively.
