摘要
采用高效液相色谱-质谱联用(LC-MS/MS)同位素内标法测定欧李果汁中氨基酸。结果表明,欧李果原汁中含有19种氨基酸,总含量为520.41mg/100mL;新检测出Asn、Cit、Cth、Cys、Hcy、bAla6种氨基酸;7种人体必需氨基酸、精氨酸和组氨酸含量为87.78mg/100mL;支链氨基酸含量为19.51mg/100mL;特征氨基酸脯氨酸含量为67.57mg/100mL;含硫氨基酸含量高达232.82mg/100mL。食用欧李果汁可以补充人体必需的氨基酸、消除疲劳、促进生长、抗衰老和提高机体的免疫力。
Amino acids in Chinese dwarf cherry juice was determined with isotope internal standard method by high performance liquid chromatography-mass spectrometry(LC-MS/MS).The main results show of the study wereasfollow:TheChinesedwarfcherryjuicecontains19aminoacids,thetotalcontentofitswas520.41mg/100mL;The Asn、Cit、Cth、Cys、Hcy、bAla were newly detected;the content of 7 kinds essential amino acid,arginine and histidine was 87.78mg/100mL;the content of human branched-chain amino acids was 19.51mg/100mL;the proline content was 67.57 mg/100mL;the content of sulfur amino acid content was 232.82mg/100mL.Drinking Chinese dwarf cherry juice could add essential amino,reduce fatigue,promote growth,anti-aging and enhance immunity.
