酶抑制法快速检测食品中重金属研究进展

Advances on the Technique of Raqid Determination of Heavy Metals by Enzyme Inhibition in the Contaminated Foods

综述酶抑制法快速检测重金属的原理和方法,介绍脲酶、葡萄糖氧化酶、蛋白酶和磷酸酯酶等检测用酶,以及与之相结合的酶传感器、试纸条、量热计、比色法等重金属快速检测新技术,提出今后的研究方向。

In this paper,it summarizes the principle and method of enzyme inhibition of heavy metal rapid determination,introduces the determination enzymes including urease,glucose oxidase,proteinase and phosphatase,combined with the new technology of heavy metal rapid determination,such as,enzyme sensor,test strip,calorimeter and the disposable cuvette.At last,it puts forward the direction of future research.
