清洗对叶菜重金属含量及去除率的影响

摘要 采集珠三角某地区近郊6块典型菜地的不同叶菜,分别进行清洗和不清洗处理。结果表明,叶菜中Pb、Cd、Hg、Cr、As的含量表现为不清洗处理大于清洗处理,经t检验发现,清洗和不清洗处理对叶菜Pb、Cr含量的影响达显著水平(P<0.05)。叶菜清洗后,Pb、Cr、As的去除率高,分别达到50%、75.4%和42%;而Cd、Hg的去除率较低,分别为11%和14.6%。表明清洗有利于减小叶菜附着污染物中的重金属含量,从而降低叶菜重金属进入食物链的风险。 Leafy vegetables were sampled from the suburban in the Pearl River Delta Region,South China,of which heavy metals(Pb,Cd,Hg,Cr,As)in the washed and unwashed shoots were determinated,and the effects of washing were discussed.The results showed that the heavy metals concentrations of leafy vegetables unwashed were higher than that washed,and the Pb,Cr concentrations reached notable leave(P〈0.05).After washing,the Pb,Cd,Hg,Cr,as concentrations of leafy vegetables removal rate were 50%,11%,14.6%,75.4% and 42%,respectively.The experimental results indicated that washing was effective in removing the heavy metals concentrations on leafy vegetables,and was effective in depressing the risk that heavy metals moving in food chain.
