摘要
采用酸-碱浸提法提取草菇水不溶性膳食纤维,并研究了料液比、NaOH浓度、处理温度及浸提时间等因素对草菇水不溶性膳食纤维产率的影响。结果表明,草菇中水不溶性膳食纤维最佳提取工艺条件为料液比1∶11,NaOH浓度为0.25 mol/L,提取温度为55℃,浸提时间为2 h;在此条件下草菇水不溶性膳食纤维的最大产率可达59.6%;水不溶性膳食纤维膨胀力为2.153 g/g,溶胀度为4.1 mL/g。研究证实草菇是提取膳食纤维的良好原料。
Using acid-alkali lixiviating method to extract water-insoluble dietary fiber from Volvariella volvacea,and the effects of solid-liquid ratio,NaOH concentration,temperature,extraction time and others factors on the yield of water-insoluble dietary fiber were researched.The results showed that the optimum extracting conditions were as follows: solid-liquid ratio was 1∶11,NaOH concentration was 0.25 mol/L,extracting temperature was 55°C,and extracting time was 2 hours.Under this condition,the production maximum yield could reach 59.6%,the swelling capacity of water-insoluble dietary fiber was 2.153 g/g and swelling ratio was 4.1 ml/g.It proved Volvariella volvacea was a good material to extract dietary fiber.
