对ＡＡＤＹ和大曲的制曲特征、培养特征进行了比较研究，并根据白酒生产中不同有机酸环境模拟白酒生产的发酵条件进行ＡＡＤＹ的发酵试验，从而剖析了ＡＡＤＹ在不同类型白酒生产中的应用条件和效果。

Manufacture characteristic and cultivation characteristic are compared and studied between AADY and Daqu And AADY’s fermentation test is done according to different organic acid environment of liquor imitating liquor’s fermentation conditions.Application conditions and effect of AADY in different types of liquor are analyzed
