摘要 目的:了解江苏省食品中7种食源性致病菌的污染情况和分布状况,为预防和控制食源性疾病提供科学依据。方法:依据《2008年度国家食源性疾病监测网工作手册》检测技术要求,对757份食品样品进行沙门菌、单增李斯特菌、副溶血性弧菌、金黄色葡萄球菌、弯曲菌、大肠杆菌O157、阪崎肠杆菌的分离鉴定。结果:757份食品样品中共检出118株致病菌,总检出率为15.59%(118/757)。7种食源性致病菌中,副溶血性弧菌检出率最高(13.46%),其次为金黄色葡萄球菌(6.95%)、单增李斯特菌(6.56%)和沙门菌(6.06%),未检出弯曲菌和大肠杆菌O157。8大类食品中,生肉和动物性水产品污染率最高,分别为32.61%和29.49%。结论:江苏省主要消费食品中存在食源性致病菌污染,生肉和动物性水产品是污染的高危食品,生肉主要被单增李斯特菌和沙门菌污染,动物性水产品主要被副溶血性弧菌污染。 Objective:To know the contamination and distribution of food-borne pathogens in 8 kinds of food in Jiangsu Province for providing the basis for prevention and control of food-borne diseases.Methods:According to the standard operation procedure of the national surveillance on food-borne pathogens,757 food samples were detected to see if Salmonella,Listeria monocytogens,Vibrio parahaemolyticus,Staphylococcus aureus,Campylobacter jejuni,Escherichia coli O157 and Enterobacter sakazakii were positive.Results:118 bacteria strains were separated from 757 food samples,the overall positive rate was 15.59%(118/757).The positive rate of Vibrio parahaemolyticus was the highest(13.46%),then Staphylococcus aureus(6.95%),Listeria monocytogens(6.56%) and Salmonella(6.06%),Campylobacter jejuni and Escherichia coli O157 were not found.In the 8 kinds of food samples,raw meat and aquatic products were highly contaminated,positive rate 32.61% and 29.49% respectively.Conclusion:There was food contamination by pathogens in Jiangsu province.Raw meat were mainly polluted by Listeria monocytogens and Salmonella,aquatic products by Vibrio parahaemolyticus,both of them were high-risk food.
