摘要
以祁门红茶主要原料,辅以洛神葵提取物,开发洛神葵红茶饮料。通过试验确定红茶最佳萃取参数为:温度80℃、茶水比1∶40、时间15min,饮料最佳配方为:祁门红茶叶0.45%、洛神葵提取物0.2%、白砂糖9.5%、柠檬酸0.15%、三聚磷酸钠0.004%、六偏磷酸钠0.002%、洛神葵香精0.015%。
A Roselle-black tea drink was developed with Qimen Black Tea as the main material,with the addition of Roselle extract.Through experiments,the optimal black tea extraction parameters were determined as: water : tea = 40 : 1,80℃ and 15 min;and the optimum formula of the drink as: Qimen Black Tea 0.45%,Roselle extract 0.2%,sugar 9.5%,citric acid 0.15%,sodium tripolyphosphate 0.004%,sodium polyphosphate 0.002% and Roselle flavor 0.015%.
