摘要
以蒜薹为原料,采用热水浸提、乙醇沉淀的方法,从蒜薹中提取多糖,然后用蒽酮—硫酸法对多糖进行定性试验,并通过对DPPH·的清除作用、邻苯三酚产生的超氧阴离子自由基(·O2-)的清除作用,研究蒜薹的抗氧化性。结果表明,蒜薹多糖提取物对DPPH·和·O2-具有一定的体外抗氧化性能,在一定试验浓度范围内,随着多糖浓度的增大,其抗氧化活性逐渐增强。
The materials of this test are sprout. Sprout polysaccharide is extracted using the methods of hot water extraction and ethanol precipitationin in this study. The DPPH ·free radical and the superoxide anion （·O2-） scavenging activity of sprout polysaccharide is investigated. The results show that sprout polysaccharide extract has antioxidant properties in vitro, and with increasing concentrations of polysaccharide, and its antioxidant activity gradually.
