烤烟钾含量与多酚、有机酸含量及评吸品质的关系 被引量:42

Relationship between content of potassium and polyphenols,organic acids and sensory quality in flue-cured tobacco leaves

摘要 以中国主产烟区294份烤烟样品为材料,研究了烤烟叶片钾含量与多酚、有机酸含量和评吸品质的关系.结果表明:(1)烤烟样本钾含量变幅10.5~43.4 g.kg-1,平均值(20.6±5.6)g.kg-1;烤烟钾含量在产区、部位间差异达到显著水平,在年份间差异不显著.(2)基于烤烟钾含量的聚类分析将供试样本分为高、中、低3类,在高钾类群中,绿原酸、芸香苷、多酚含量、非挥发性有机酸、挥发性有机酸、有机酸总量均为最高,莨菪亭和高级脂肪酸含量最低;在中钾类群中,多酚和有机酸含量均表现中等;在低钾类群中,绿原酸、芸香苷、多酚含量、非挥发性有机酸、挥发性有机酸、有机酸总量均为最低,莨菪亭和高级脂肪酸含量最高.(3)中、高钾含量类群的评吸质量显著高于低钾含量类群;不同香型风格类群、不同工业用途类群间相比较,烤烟钾含量差异不显著,但评吸总分差异达到显著水平. 294 samples of flue-cured tobacco leaves from main tobacco-growing areas of China were used as materials to analyze the relationship between potassium content,polyphenols content,and organic acids content and sensory quality.The results indicated that:(1) potassium content in flue-cured tobacco leaves ranged from 10.5 to 43.4 g·kg-1,with the mean of 20.6 g·kg-1 and standard deviation of 0.56 g·kg-1.There existed significant differences among different tobacco-growing areas and different stalk positions at 5% level,but no significant difference was found among different years.(2) on the basis of potassium content,samples were divided into high,medium and low groups by cluster analysis.The group with high potassium content had the highest contents of chlorogenic acid,rutin,polyphenols,non-volatile organic acid,volatile organic acid and organic acids,but had the lowest contents of scopletin and senior fatty acid.The group with medium potassium content had the medium contents of polyphenols and organic acids.The group with the low potassium content had the lowest contents of chlorogenic acid,rutin,polyphenols,non-volatile organic acid,volatile organic acid and organic acids,but the highest contents of scopletin and senior fatty acid.(3) the smoking quality of mid-high group was better than that of the low group,and had significant differences.The potassium content had no significant differences among different groups for both aroma style and use propose,but the smoking scores were found significant by different at 5% level.
