密集烘烤烤烟细胞壁主要成分及降解酶变化研究 被引量:15

摘要 采用河南农业大学设计制造的电热式温湿自控密集烤烟箱,研究了烘烤过程中烟叶细胞壁主要成分及其酶活性变化。结果表明,密集烘烤条件下细胞壁成分中可溶性果胶含量先升后降,原果胶含量、纤维素含量持续降低。细胞壁降解酶活性随着烘烤过程的进行而升高,在48℃达到峰值后迅速降低。其中果胶甲酯酶(PE)和多聚半乳糖醛酸酶(PG)关系密切,共同促进果胶降解;纤维素酶主要是促进纤维素降解。细胞壁组分的降解是细胞壁降解酶综合作用的结果。 The changes of main components of flue-cured tobacco cell walls and the activities of the cell wall degrading enzyme during flue-curing were researched by using the electric-heated flue curing barn designed and made by Henan Agricultural University. The contents of soluble pectin increased at first and then decreased while the contents of protopectin and cellulose decreased continuously during the bulk curing process. The activities of the cell wall degrading enzyme increased following with the process of flue-curing. The activities decreased after reaching to the peak value 48℃ . The activities of pectinesterase(PE) was closely related with polygalacturonase(PG) . The interaction of PE and PG promoted the degradation of pectin. The action of Cellulase was mainly promoted the cellulose’s degradation. The degradation of cell wall components resulted from the synthetic action of the cell wall degrading enzyme.
