摘要
花生是我国的六大油料作物之一,但因榨油工艺的高温高压,花生粕中蛋白质变性而难以被利用。比较Alcalase酶、N120P及复合蛋白酶对花生粕中蛋白质的酶解效果,试验证明复合蛋白酶效果最好,确定复合蛋白酶的最佳条件:其用量1800U/g、水解时间90min、水解温度55℃、pH6.0、料液比1:9(g:g)。测定结果显示短肽的分子量集中在800u~1200u。
Peanuts are one of China's six major oil crops.The proteins,which was variability in peanut oil extraction process a result of high temperature and pressure,is difficult to be used.This study compared the Alcalase enzyme,N120P,and protamex on peanut meal in the experimental results,experimental results prove that the best protamex,optimal conditions determined protamex:the amount of 1 800 U/g,hydrolysis time of 90 min,hydrolysis temperature of 55 ℃,pH6.0,the degree of hydrolysis 1:9(g:g).Determination showed that the molecular weight of peptides concentrated in the 800 u-1 200 u.
