摘要
前期研究表明添加鱼蛋白胨至脱脂乳中可显著促进植物乳杆菌ST-Ⅲ的生长,并且活菌数最高可达到1.4×109cfu/mL,最高酸度也达到了60°T。因此,本文将对鱼蛋白胨进行进一步的分级和分离。试验中采用超滤膜、凝胶过滤对其分离纯化,并用红外光谱分析法以及高效液相测定分子量分别对有效组分进行分析。得出能够对植物乳杆菌ST-Ⅲ在脱脂乳中生长的很可能是几个氨基酸组成的寡肽类物质。
Supplement of peptone prepared from fish tissues could significantly stimulate the growth of Lb.plantarum ST-III in skim milk and facilitate milk curd by acidification.And after cultivation the number of visable bacterium in the fermented milk could reach 1.4×109 cfu/mL and the titration acidity was up to 60°T.Therefore,it's need to have more elution for fish peptone.We have an assay on fish peptone with ultrafiltration membrane,Sephadex column,IR spectra and High performance liquid chromatography.And it was presumed that small peptides were correlated with the poor ability of Lb.plantarum ST-III to grow in and clot milk.
