摘要 [目的]为了更为科学、合理地开发与利用野菜资源,分析了刺儿菜中一些微量元素的含量。[方法]以牡丹江市西山野生的刺儿菜为原料,讨论了不同灰化温度对样品处理后各元素测量结果的影响,采用原子吸收光谱法测定刺儿菜中铁、钙、锌、钠、锰、镁、钾等元素的含量。[结果]采用灰化法处理刺儿菜样品时,灰化温度以500℃为宜,此时样品颜色为灰白色,灰化比较彻底。对刺儿菜在不同生长时期各元素的含量进行研究,发现成熟期刺儿菜对微量元素的富集程度要高于生长期,且主要集中在根茎部位,成熟期刺儿菜全草中铁、钙、锌、钠、锰、镁、钾等元素的含量分别为8.72、410.77、1.54、21.44、0.73、6.24、432.73mg/100g。[结论]刺儿菜中含有多种人体所必需的营养元素,且其中Ca、K的含量较高。 [Objective]The content of the micro-element in Cirsium segetum was analyzed for the scientific and reasonable development and utilization of wild plant resource.[Method]The effect of the different cinereous temperatures of the wild Cirsium segetum samples,which were collected from Xishan mountain in Mudanjiang City,on the content of micro-element including iron,calcium,zinc,sodium,magnesium,manganese and potassium,which was tested with the method of Flame Atomic Absorption Spectrometry,was analyzed.[Results]The treatment of 500 ℃ to sample in the process of its cineration was best and the sample was completely cinereous with white color.The testing result indicated that the accumulation of micro-element in maturity stage was higher than that in growth stage and the micro-element was mainly accumulated in the part of root and stem.In maturity stage,the contents of iron,calcium,zinc,sodium,magnesium,manganese and potassium in whole Cirsium segetum plant was 8.72,410.77,1.54,21.44,0.73,6.24 and 432.73 mg/100 g.[Conclusion]There were various micro-elements in Cirsium segetum,which was necessity and beneficial to human body health,among which,the content of calcium and potassium were the highest.
