Monitoring Results of Aluminum Contents in Flour Products in Shenzhen City

摘要 目的了解深圳市面制食品中铝含量,分析超标原因,提出控制铝污染的对策和建议,为卫生监督提供科学依据。方法采用ICP-MS法对市内餐厅、食堂、工厂、超市等场所采集的面制食品检测铝含量。结果检测7类面制食品样品530份,总合格率为54%,其中面粉、肠粉、油炸食品合格率均为100%,烘烤食品合格率为96%,蛋糕合格率为53%,蒸制食品合格率为44%;油条的合格率仅为35%,铝平均含量为145.0mg/kg。结论油条和蒸制食品、蛋糕中铝含量过高与制作过程中使用含铝添加剂有关。建议卫生监督机构应加强面制食品中铝含量的监督检测。 h[Objective] To understand the aluminum contents in flour products in Shenzhen City,to analyze the causes of overproof,to put forward some strategies and advices of controlling aluminum pollution,and provide scientific basis for health supervision.[Methods] ICP-MS method was adopted to determine aluminum content of flour products collected from restaurants ,canteens,factories and supermarkets.[Results]A total of 530 samples of 7 kinds of flour products were detected,the total qualified rate was 54%,among which the qualified rate of flour,rice rolls,fried food,baked food,cakes,steamed food and twisted cruller was 100%,100%,100%,96%,53%,44% and 35%,respectively. The average content of aluminum was 145.0 mg/kg.[Conclusion]The high content of aluminum in twisted cruller,steamed food and cake is related with food additives application with aluminum. It suggests that the hygiene supervise organization should reinforce health supervision and testing of aluminum content in flour food.
