摘要
利用改良的连苯三酚自氧化法对市售的28种新鲜水果中的超氧化物歧化酶(SuperoxideDismutase,SOD)进行了分析测定,结果表明,除河南蜜瓜(CitrulusvulgarisSchracl.cvHenanmigua)外,27种水果中均含有超氧化物歧化酶(SOD),其可食部分单位活力最高的是刺梨(RosaroxburghiTrat.1325×10-8mol/sg);其次是香蕉(MusananaLour.994×10-8mol/sg)、猕猴桃(ActinidiachinensisPlanch.643×10-8mol/sg);单位活力最低的是李(PrunussalicinaLindl.19×10-8mol/sg)。
By modified method of pyrogallic acid self oxide, the superoxide dismutase (SOD) was determined in 28 fresh fruits sold in market. The results showed that SOD existed in 27 tested fruits except for Citrullus vulgaris Schracl. cv Henan. The highest active unit of SOD is Rosa roxburghii Tratt(132510-8mol/sg),next are Musa nana Lour(99410-8 mol/sg) and Actinidia chinensis Planch (64310-8mol/sg),the lowest is Prunus salicina Lind (1910-8mol/sg).
