摘要
采用盐析法从鲜猕猴桃皮渣中提取食用果胶,并对其制取工艺条件进行了研究,结果表明:当萃取液的pH值为2,温度90℃,萃取时间为70min,并用硫酸铝作沉淀剂时,果胶得率达4%。与酒精法相比,盐析法提取果胶具有成本低、得率高等特点。
A research is conducted on the technological conditions of extracting pectin from fresh kiwifruit peel by salting-out.Experimental results show that when the pH value of the extracting solvent reaching 2,the operating temperaure as high as 90℃ and using aluminium sulfate as settlement after 70 minutes,the total yield of pectin is(higher than)4%.Compared with the way of alcohol,the way of salting out has advantages of lower cost and higher yield.
