摘要
根据分离获得的青春型双歧杆菌(Bifidobacteriumadolescentis)的特性,探讨了双歧杆菌酸奶的生产工艺及配方,摸索了喷雾干燥和真空冷冻干燥生产双歧杆菌奶粉的工艺。双歧杆菌奶粉经过检测,喷雾干燥后存活率为59.0%;冻干奶粉菌存活率近100%,奶粉含活菌为108个/g以上。用平板倾注法研究了青春双歧杆菌对6种抗生素的敏感性,并用高效液相色谱法对特征产物进行鉴定,同时测定了青春双歧杆菌α—糖苷酶的酶活。提出以上三个方面为双歧杆菌制品品质控制重要内容。
The technologies of the Yogurt and milk powder with living Bifidobacterium adolescentis ZG96 have been studied.A new taste Bifidobacteria yogurt is obtained by orthogonal test.Spraying dry and lyophilization test resulted in that vacuum lyophilization is the better way to produce Bifidobacteria milk powder. About 100% of Bifidobacterium abolescentis after vacuum lyophilization is still alive while only 59% from spraying dry technology. The α glucosidase is suggested to be one of the quality control facts of Bifidobacteria living products.The characteristic metabolism products and antibiotic susceptibility are also proposed as the main aspects to control the quality of Bifidobacteria living products.The results show that Bifidobacterium adolescentis ZG96 produces characteristic metabolism substances and it is resistant to terramycin(MIC=1400 U/ml),less resistant to lincomycin,micronomicin,kanamycin,and penicillin (MIC=100~400 U/ml) ,and more susceptible to cefazdin(MIC<100 U/ml) .
