摘要
采用纤维素酶、半纤维素酶和木聚糖酶对粉碎后的笋头进行处理,以得到水溶性膳食纤维。通过实验选择最佳的复合酶配比,探究了酶解过程的最佳工艺条件,从而提高水溶性膳食纤维的溶出量。实验结果表明,纤维素酶、半纤维素酶和木聚糖酶的最适用量比例为3∶2∶1,在温度为60℃,复合酶用量为0.7%,pH为6.0,酶解时间4h的条件下,可溶性膳食纤维溶出量达最高,为4.35g/100g。
Using cellulase, hemicellulase and xylanase to degrate the basal part of bamboo shoots which was treated by ultratime,water-soluble dietary fiber could be obtained.The test was adopted to explore the best ratio of compound enzyme and the best technological conditions of enzymolysis process. In order to enhance the dissolution rate of water-soluble dietary fiber, the result indicated that the optimal allocated proportion was cellulase'hemicellulase:xylanase =3:2:1 and the optimal enzymolysis conditions were as follows:temperature 60℃, amount of enzyme 0.7%, enzymolysis time 4h, pH6.0, liquid-solid ratio 4:1. The maximum dissolution of water- soluble dietary fiber reached 4.35g/100g.
