摘要
黄水是白酒酿造的重要副产物,其应用研究一直是白酒科研领域的热点。简要介绍了黄水的组分及其研究进展,并从传统物理化学方法、生物酯化方法和新提取技术3个方面对黄水的应用研究成果进行了综述。
Yellow water,as an important byproduct in liquor production,its application is always the focus in the field of liquor-making research.In this paper,the compositions of yellow water and the research advance in its application was introduced.In addition,the research accompliments of yellow water was reviewed covering three aspects including traditional physiochemical methods,bio-esterification methods and new extraction techniques.
