对中国白酒复杂香的探讨——倡议重视复杂香、复杂成分的研究和生产

摘要 复杂香是指白酒中含量甚微、种类繁多且多不被人知的组分,这些组分决定了酒的独特个性,根据我国白酒香味成分在呈香呈味方面不同的作用,建议把中国白酒香气构成细分为复杂香、共有香、主体香3个部分,把复杂香的重要性放在三大部分的首位,扭转我们过去在生产上过分重视主体香,导致了同质化现象的产生。倡导大力研究复杂香,为中国白酒特征香味物质研究和品酒技术的完善指明方向。 Complex flavoring compositions mean a great variety of minute amounts of unknown flavoring compositions in liquor.These compositions is a decisive factor to determine the special styles of liquor products.According to the flavorproducing aroma-producing roles of flavor-ing compositions in liquor,they are divided into three types including complex flavoring compositions,common flavoring compositions,and main flavoring compositions.Among them,complex flavoring compositions,instead of main flavoring compositions which might induce liquor product homogeneity,is of the greatest importance.We hereby proposed attaching more importance to the research on complex flavoring compositions,which could define the research direction of liquor characteristic flavoring compositions and perfect liquor tasting techniques.
