摘要
α-L-鼠李糖苷酶是一种水解酶,可以作用于α-1,2、α-1,3、α-1,4、α-1,6以及α1连接的糖苷键,广泛存在于自然界的细菌和真菌中。不同来源的α-L-鼠李糖苷酶的结构不同,其催化特性也不尽相同。α-L-鼠李糖苷酶在食品、医药、化学等行业都有广泛的应用。该文综述了α-L-鼠李糖苷酶的来源、分类、特性及应用等。
α-L-rhamnosidase is a kind of hydrolase and can link glycosidic bond of α-1,2, α-1,3, a-1,4, α-1,6 and al, which are widely exist in bacteria and fungi. Different sources of α-L-rhamnosidase have different structures and catalytic properties, α-L-rhamnosidase has a wide applications in the food, medicine, chemical and other industries. This paper reviewed the source, classification, characteristics and applications of α-L-rhanmosidase.
