摘要
通过比较褐藻酸钠(Alg-Na)、卡拉胶和羧甲基纤维素钠(CMC)等可食用胶的化学稳定性、黏度等,筛选出CMC作为缢蛏保鲜被覆剂的配方,为缢蛏保鲜方法提供了一种新选择。
The chemical stability and viscosity of sodium alginate,carrageenan,and sodium carboxymethylcellulose are compared.Based on the results of comparison,the CMC is chosen as a raw material of preservation coating,so as to provide a new method for coating preservation.
