摘要
小米醋历史悠久,是最早的粮食醋之一。最早出现于夏商时期,在魏晋南北朝时期得到了较大发展,唐宋时期得到普及和应用扩大化,逐渐拓展到药用领域,在元代达到酿造工艺的顶峰时期。清末民初,随着资本主义在中国萌芽,小米醋作坊也如雨后春笋般林立起来。详述了晋南小米醋工艺发展演进的历史,对小米醋的工艺保护提供了重要的理论基础。
Millet vinegar has a long history,it is among the earliest vinegar of grain,which can be dated back to the Xia and Shang period.The manufacturing technology of millet vinegar is great developed during Western Han,Eastern Han dynasty and Wei,jin and Northern and Southern dynasties,and continued to spread and application during Tang and Song dynasties,In Yuan dynasty,this technology reached the acme.In the late Qing dynasty and the early Republican China,workshops of millet vinegar sprang up.This paper elaborates the history of the development of millet vinegar manufacturing technology,offers an important theoretical basis for protecting this technology.
