乳清蛋白及其活性多肽的生物学功能研究进展 被引量:27

摘要 乳清蛋白是存在于牛奶乳清中的一类优质蛋白质,含有β-乳球蛋白(β-LG)、α-乳白蛋白(α-LA)、牛血清白蛋白(BSA)、免疫球蛋白、酪蛋白糖巨肽(CGMP)、乳铁蛋白(LF)等多种生物活性成分。研究表明,乳清蛋白本身及其水解产物具有抑菌、抗病毒、抗癌、免疫调节、抗氧化、降血压、降血糖、降胆固醇等多种生物学功能,具有广阔的开发应用前景。综述了乳清蛋白的组成、生理功能及其活性多肽的生物学作用。 Whey protein is a high-quality protein in milk,contained lots of minor active components including β-lactoglobulin(β-LG),α-lactalbumin(α-LA),bovine serum albumin(BSA),immunoglobulins,casein glycomacropeptide(CGMP),lactoferrin(LF),et al.Research has found that whey protein and its hydrolysates possess various bioactivities,such as antimicrobial,antiviral,antioxidatant,antihypertensive,anticarcinogenic,and immunomodulating activity.This paper reviews the component,physiological function and bioactivities of whey protein and its bioactive peptides.
