摘要
[目的]掌握寿光市餐饮业食(饮)具卫生状况,进一步了解近年来餐饮业消毒安全专项整治效果。[方法]于2009年9~12月对全市城乡范围内的365家餐饮单位进行了调查,并在其中325家中随机采集各类食(饮)具样品1725份。[结果]市、乡两级餐饮单位食(饮)具样品合格率分别为86.41%、81.77%;学校食堂、集体食堂、社会餐饮三类餐饮单位样品合格率分别为82.43%、85.94%、84.14%,;小食(饮)具筷子、匙子、小碟、小碗的样品合格率分别为93.75%、94.33%、92.98%、91.72%,大食(饮)具大碟与汤盆的样品合格率为86.41%、85.58%。[结论]寿光市餐饮单位自身管理水平有所提高,但仍有少数单位特别是乡镇的社会餐饮存在消毒设施不健全,大食(饮)具样品合格率相对较低现象。
[Objective] To learn the sanitary condition of tableware in Shouguang's catering industry,and further know the governance effect for safety and sanitation requirements of the catering industry.[Methods]Inspect 365 catering entities in Shouguang and randomly collect 1 725 tableware samples from 325 catering entities.[Results]The passing rate of tableware in urban area and rural area were 86.41 and 97.77,respectively;the passing rate of tableware in school canteens,group canteens and social restaurants are 82.43%,85.94% and 84.14%,respectively;the passing rates for chopsticks,spoon,saucer were 93.75%,94.33%,92.98%,91.72%,and the passing rates for large dishes and soup pot were 86.41% and 85.58%.[Conclusion]There have been some improvements in self-management in Shouguang's catering industry,but a few catering entities,especially the social catering entities in the rural area,do not have sufficient facilities for sanitizing,and the passing rate of large tableware is relatively low.
