摘要
在这篇文章中,对来自日本,法国和EBC的啤酒大麦综合评价方法进行了简单的介绍。在此基础上,将EBC的综合评价方法与我国各厂专家对相同的20个啤酒大麦品种的分析结果的评价进行了相关分析。分析结果表明,EBC的综合评价方法与我国专家的评价结果基本上一致,两者间存在着较好的相关性(γ=0.5695>γ0.01=0.148)。所以在我国应用EBC的综合评价方法是完全可能的。另外,本文中还根据我国的具体情况讨论了如中值、标准偏差等问题。正确地评价啤酒大麦的质量对于啤酒的酿造质量是十分重要的,所以希望今后能参照EBC的综合评价方法来建立一套适合我国的新的综合评价方法。
In this article, several methods of overall evaluation of malting barley quality are introduced from Japan, France and European Brewery Convention. After they were compared and disscused simply, the main subject is to disscuse a correlation between E.B.C. method (QBMC-Quality Index of the Barley and Malt Committee of the European Brewery Convention) and evaluation from brewer for same data of quality in malting and brewing of 20 varieties of malting barley. It show us a good correlation coefficient between them(γ =0.5695>γ0.01=0.148) So there is a possibility of using overall evaluation of E.B.C.method in China. On the other hand, some problems are disscused such control limit, standard deviation and etc, according to Chinese situation. The correct overall evaluation of malting barley and malt quality is very important in the quality of beer. So it's hope to establish new method of overall evaluation in China in further consulted the E.B.C.method.
