主要介绍脂肪酸的构成、合成、转化及人体必需脂肪酸对人体健康所起的特殊作用，并简述了目前发展利用情况。
This paper mainly introduces the composition, compounding and convertion of fatty acid and the special function of the essential fatty acid for human health. It also discusses the present development and utilization of the essential fatty arid.
